We are seeking a Sous Chef for The Clifton located in
Charlottesville, VA. Original 1799 building boasting history,
modern charm and seven newly renovated and luxurious bedrooms and
suites in Virginia. With its sun-drenched veranda and an enclosed
patio with stunning views of the Virginia countryside through
floor-to-ceiling windows, 1799 is one of the most romantic
restaurants in Charlottesville, VA. Our culinary team is lead by a
Michelin Star chef. Nestled in a beautifully forested area of our
rural and sprawling 100-acre property, the Court Tent is the
premier outdoor wedding venue offering ample space for dinners of
250 or cocktail receptions of 300. The Clifton's Culinary team is
looking for an experienced Sous Chef to join their amazingly
talented team. The ideal candidate for this position will have at
least 4 years of experience in catering and or banquet at a similar
sized property. In this role, you will be expected to do the
following duties: Assigns, in detail, specific duties to all
employees under supervision for efficient operation of the kitchen.
Select, train and supervise kitchen staff in the proper preparation
of menu items. Schedule culinary staff so that proper coverage is
maintained while keeping payroll costs in line. Ensure proper
receiving, storage (including temperature setting), and rotation of
food products so as to comply with Health Department regulations.
Adhere to control procedures for cost and quality. Supportive
Functions Supervises daily cleaning of the walk-in and reach-in
boxes for safety reasons. Maintains vacation schedule for proper
staffing. Reports any equipment in need of repair to chef and
maintenance, for service. Performs other duties as requested.
